What side of the plane is best for views coming into Dubai?

It depends…

In my opinion, the best views are to the south of the airport, over Dubai itself.

Where on the aircraft to sit to get such views will depend on where you are coming from and in which direction they are using the runways (this is determined mostly by wind).
