Maybe I’m doing something wrong but I can not find an award ticket to Easter Island in economy. I’ve searched BA’s site for many dates in each month a year out and only seem to come across business class tickets here and there.

Any advice?

Not missing anything, sadly! Just a popular route and thus limited award availability.

I’d just grab the business class tickets if you have enough miles. Or set alerts for cheap paid flights, maybe out of MEX or something and get a separate ticket to MEX.
