The Amex Offers program frequently has promotions for hotel stays (including with Hilton, IHG, and Marriott), which can save you money or earn you bonus points for stays youd make anyway. I guess the Hotel could have two channels to charge, one for SLH, another for Hilton. Since if you reserve with Hilton, you get Hilton reservation number, Hilton receipt, etc.

What matters to Amex is how the payment transaction is coded. If when you book the cash back isn't triggered, then you may request to reprocess payment upon checking in or checking out.

Not necessarily true. As long as the payment is taken by the property that's fine. Last year I stayed at M de Megeve (Amex has a similar 100/300 offer for SLHs both in France and in the UK) and:
- paying online (having booked through Hilton) did NOT trigger the cash back
- however, upon check-out I asked changing the payment method (essentially, triggering a refund of the original Amex online payment and processing an on-site Amex payment with the very same card) and that immediately triggered the cash back
That's helpful. So, there might be a way to book via Hilton (which is great, especially if you can use points), then pay using the Amex Offer card at checkout for incidentals/property charges. YMMV.
Can you book at slh.com and have the Hilton honors number added. You might not get the Hilton status benefits .
