I am planning a trip and would like to take my parents with me, however, since I have access to company’s corporate rate so I booked both rooms under my name to enjoy the special rate. We will stay at the hotel for 3 nights, however, at the end of the stay will I be able to accumulate 2 qualifying stays and 6 eligible nights?

Nope, you just earn credit for a single room with Hyatt.
