I have been thinking about transfering them but wondering if I should transfer them all excess of 700K points to one carrier at one time or wait until I need them. I haven’t been traveling lately so I don’t want to lose them if I transfer them to a carrier that I don’t use often.

Wait until you need them to transfer the points. As long as you have a card that earns transferable Amex MR points, they wont expire if you keep them with Amex.
