As a follow up I wanted to let everyone know what my plans are like.

This is our itinerary:
March 25: EWR-AMS
April 03 : MXP-EWR
[B]Nov 24: EWR – PHX

I made use of the UA Award rules completely putting the open jaw and stop over to play. Super happy about that. Total for each: 60K UA + $83 in taxes.

I am a foreign national and need Schengen Visa. With such a short notice, I could not get an appointment from any country’s consulate. When emailed, the dutch consulate was very responsive and accommodated a walk in.
We are spending 3 days in Amsterdam and 5 days in Italy.

Transferred 21K MR to FlyingBlue and booked 2 tickets from AMS-FCO.

Spending couple days in Rome, then on to Cinque Terre.

I am still yet to decide our plans for the last 2 days. Since our flight is from Milan, I am thinking of Florence and then to Milan and back to EWR.

I have a reservation at the PH Milan but still debating to keep that if we are not going to be in the hotel to enjoy it.
