flying united first to munich with a three hour layover to Athens with Aegean business. Which lounge should we visit? Schengen or non-schengen?

I would say go with the Schengen lounge simply to avoid having to rush from lounge to the Aegean flight, you will never know in advance how long the line will be in immigration.
