Multiple FF accounts

For Example: I have a Qantas FF account. I want to purchase a cash ticket with them for a new flight. Can I credit these miles to my American Airlines FF account instead of my Qantas FF account?
Yes. You can enter in whichever frequent flyer program you want when you purchase the ticket and/or at check in.
If you have status with QF, you might want to attach your Qantas FF number to the ticket for whatever perks you received. Then at the gate, have the gate agent switch out the Qantas FF number for the American FF number
