Amex travel bait and switch?

I’m attempting to book on the AmEx travel site. We’re looking at dates around Thanksgiving to fly to Lanai from Seattle and stay at the Four Seasons. The prices posted don’t match what you’re given when you select a package to checkout. Sometimes the costs actually double. I spoke with a chat agent about this and they blamed IT saying they have so many millions of combinations that they can’t keep up with the fluctuating price changes but that doesn’t sound accurate to me. I understand that airlines/hotels could change the rates at some point, but it seems highly suspect that this would happen upon pressing the selection button every single time. I mentioned this to the chat agent and he exited the chat. Is there anything that can be done about this misleading practice?
