By using Amex points do you mean transfer to an airline FF program?
If so I would begin with looking at the Transfer Partner Master list by Frequentmiler to find where I can transfer the miles.

But it really depends on where you are flying from and what products are available in your marked.
Normally don’t use Emirates own program so can’t help you there.
